马铃薯全粉及其面条制品加工研究进展

         

摘要

Potato powder is the basic material to solve the "potato staple food strategy". In this paper, the "potato staple food" strategy was summarized. The research progress of potato powder and nutritive value of potato powder, all types of powder, the processing present situation were introduced. The status of the potato noodles and noodles quality improvement research results were detailed introduced in this paper, and the application prospect in the fu-ture was prospected.%马铃薯全粉是解决"马铃薯主食化战略"的基础原料.本文对"马铃薯主食化"战略进行了简要介绍,重点对马铃薯全粉营养价值、种类、加工现状以及马铃薯全粉面条应用现状与品质改良方法技术进行了总结,并对今后的应用前景进行了展望.
