大深度饱和潜水试验后潜水员膳食调查结果分析

摘要

目的 了解执行大深度饱和潜水试验后潜水员的膳食摄入状况,为大深度饱和潜水的营养保障提供依据.方法 采用称量法调查参加大深度饱和潜水试验后潜水员膳食摄入情况,并用“军人食物定量标准”(GJB 826B-2010)和“军人营养素供给量标准”(GJB 823A-1998)评价膳食质量.结果 (1)潜水员的猪肉、鸡蛋的摄入量过多,达标率分别为182.93%和176.89%,而牛羊肉、禽肉等未达标;(2)三大产热营养素供给达到军标要求,但碳水化物供能比例为44.5%,略偏低;(3)蛋白质和脂肪摄入的来源构成符合军标要求;(4)通过补充复合维生素1片/d,维生素的摄入量达到有关要求,矿物质中钠摄入量过多,为14 739 mg/d,其余矿物质摄入量基本达标.结论 大深度饱和潜水试验后潜水员的能量和多数营养素的摄入量能达到军标要求,但应减少动物性脂肪及食盐的摄入,注重复合维生素片的补充,如有条件,应使用橄榄油为烹调油.%Objective To know the food intake of divers following deep saturation diving experiment,so as to provide the basic evidence for nutrition support to divers in future deep saturation dives.Methods The dietary survey of divers following deep saturation diving experiment was carried out by using the gravimetric method.And "Food Ration Standards for Military Personnel" (GJB 826B-2010) and "Military Nutrient Supply Standards for Military Personnel" (GJB 823A-1998) were used to evaluate the quality of food service.Results (1) The intake of pork and eggs was redundant,with compliance rates of 182.93% and 176.89% respectively,while on the other hand the intake of beef,mutton,and poultry meat did not meet the specified standards.(2) The intake of 3 energy supply nutrients met the military standards,however the percentage of energy supply by carbohydrates was slightly lower (44.5%).(3) Sources of protein and fat intake also met the military standards.(4) Through supplementary supply of compound vitamin (1 pill a day),the intake of vitamin also met the required military standards.The intake of sodium was redundant (14 739 mg/d),and the intake of other minerals could also satisfy the basic requirements of the military standards.Conclusions After deep saturation diving experiment,the intake of energy and most nutrients could meet the required military standards.However,the intake of animal fat and salt should be reduced.Efforts should be made to supplement compound vitamin pills,and if possible,olive oil should be used for cooking.
