The stress responses and molecular mechanisms of Lactic acid bacteria to environmental stress were reviewed.The stress proteins,metabolite induction and gene regulation of the Lactic acid bacteria were highlighted at the cellular and molecular level under temperature, pH,oxidative, osmotic, high-pressure and starvation stress conditions.Understanding the molecular mechanism and adaption to stress at the level of gene and proteomics of Lactic axid bacteria, will lay the valuable theoretical basis for improving fermentation conditions and high-yield strains breeding.%对乳酸菌在环境胁迫下的应激反应及其分子机制进行了综述,并着重从细胞和分子水平,探讨了乳酸菌在温度、pH值、氧、渗透压、高压和饥饿等胁迫条件下,应激蛋白和代谢产物的诱导合成以及基因调控机制.深入了解乳酸菌反应的分子机制、以及基因和蛋白质组水平的适应性变化,可以为改进乳酸菌发酵条件和菌种改良提供有价值的理论依据.
