Change and decay laws of infant formula milk powder Ⅰ 、Ⅱ and Ⅲ nutrients during shelf-life were studied.It was showed that their degradation rule was same and average decay rate was-7.77%、-7.32%、-7.03% respectively after 24 months,macr0-nutrients change little,average decay rate of vitamin was-9.78%、-8.86%、-7.67% and mineral was-6.46%、-3.66%、-6.65% respectively.average decay rate of other nutrients(choline、inose、taurine、L-carnitine) was-15.39%、-18.24%、-13.96% and lutein was-22.49%、-29.38% 、-28.03% respectively.The results can provide a theoretical reference for the scientific formula design of infant formula milk powder.%研究了婴幼儿配方奶粉(Ⅰ段、Ⅱ段、Ⅲ段)中的营养成分在货架期内的变化情况并分析其衰减规律.结果表明,各个阶段配方奶粉相同营养成分的衰减情况基本一致;货架期结束后,Ⅰ段、Ⅱ段与Ⅲ段中的营养成分平均衰减率分别为-7.77%、-7.32%、-7.03%,其中宏量营养素变化不大,维生素平均衰减率分别为-9.78%、-8.86%、-7.67%,矿物质平均衰减率分别为-6.46%、-3.66%、-6.65%,其他成分(胆碱、肌醇、牛磺酸、左旋肉碱)平均衰减率分别为-15.39%、-18.24%、-13.96%,叶黄素平均衰减率分别为-22.49%、-29.38%、-28.03%.研究显示,在密闭充氮的铁罐包装中,各个营养成分虽有衰减,但均可控,货架期结束后,研究用奶粉均符合食品安全国家标准的规定.该研究旨为今后婴幼儿配方奶粉稳定性研究以及货架期保存条件提供指导建议.
