摘要

The study introduces high efficiency washing method for food manufacturing device, and explains stain adhesion characteristic, washing mechanism, evaluation method of cleaning effect and EBC. Final y, it draws a conclusion that efficient cleaning of food manufacturing equipment is an effective measure to implement health management in the process of food manufacturing.%本研究介绍了食品制造装置的高效洗涤方法，对污垢的附着特性、洗涤机理、洗净效果的评价方法、EBC（循证洗净）作了具体说明，指出食品制造装置的高效洗净是对食品制造过程实施确实卫生管理的有效措施。
