This qualitative research study explored the perceptions of older adults in regards to important characteristics of the mealtime experience; and, also investigated the meaning of the mealtime experience for older adults residing in independent and assisted living centers. The research question was "What are the perspectives of older adults regarding their mealtime experience?" Secondary foci included values, opinions and ideals regarding the eating experience. This study utilized a purposive, criterion sample of adults aged 65 years or older who lived in independent and assisted living centers. The research site was a Continuing Care Retirement Community (CCRC) consisting of independent and assisted living arrangements. This qualitative study involved strategies of data collection using semi-structured, in-depth interviews and peer debriefing.;A systematic investigation of older adults' mealtime experience has the potential to improve the quality of life of CCRC residents through increased resident satisfaction with meals, the facility and with the management of the facility. The findings identified important variables such as the role of socialization, menu content, seating preference, the quality of cooking (including preparation, temperature and seasoning) and the occurrence of alternative food choices which do not appear on the menu. However, the meal experience tended to be a positive, satisfying activity. In addition, it was concluded that satisfying meal experiences can be empowering for residents.
