Mangoes (Mangifera indica L.) have grown considerably in economic importance in recent years. Starting out as a specialty product, mangoes have changed in status to a standard item in produce departments. Air shipment has given way to marine transport, resulting in harvesting and handling practices that have sacrificed quality.
