Soul food cafe: Recipes for the mind, body, and soul of African-Americans.

In the African-American community, there is a social experience called "The Soul Food Dinner." Such dinners often take place on Sunday and are a cherished tradition in this community. Unfortunately, there is a body of research that indicates that obesity, which can cause high blood pressure and diabetes, is directly related to the cuisine enjoyed in conjunction with this tradition.;Forty-four million Americans are classified as overweight; African-Americans account for 31.1% of that number (Center for Disease Control 2004). In response to this and other negative statistics, Soul Food Cafe: Recipes for the Mind, Body, and Soul of African-Americans was developed.;This nutritional guide for healthy soul food cooking will inform African-Americans about the history, diseases and theories connected to soul food, as well as offer alternatives that could improve the quality of life. It will also strive to clarify any confusion about how to implement healthy alternatives without destroying the phenomenon of the total social experience that African-Americans call "Soul Food."
