Six Sigma and food plant sanitation: A handbook for the improvement of cleaning and sanitizing processes.

Food organizations constantly face risks of delivering contaminated products. In order to address such risks the food industry implements food safety management systems in which the Food Plant Sanitation program is an important component of the system. This project demonstrates how Six Sigma contributes positively to food plant sanitation practices by using the Define, Measure, Analyze, Improve, and Control (DMAIC) methodology in the improvement of cleaning and sanitizing processes of food processing equipment.;The long-time used semi-empirical approach for introducing food plant sanitation protocols offers numerous opportunities for process improvement and optimization. This work offers a practical handbook for the DMAIC implementation that will help to identify and develop those opportunities for improvement. The resulting model of sanitation process improvement could be adapted to specific conditions and requirements of individual food plants in order to customize more effective sanitation programs than those generated under the typical approach.
