The paper presents the study of liquid crystal (LC) materials with spiral structure under the influence of medicinal plant metabolites materials. Such materials are important for medicine, pharmacology and other branches of industry. The results of spectral studies of the system on the base of cholesteric liquid crystal (CLC) with quercetin make it possible to propose these materials to design the primary transducers of biological substances optical sensors. In paper shown that the solubility of quercetin in the polar nematic 5CB significantly increase compared with the steroid CLC blend BLO61. The technical solution for the circuit diagram of a secondary converter of optical sensors is proposed.
