Unbalanced diets are known to produce oxidative stress which is a risk factor for developing metabolic diseases such as atherosclerosis, diabetes and cancer (Sies et al., 2005). Polyphenols have been shown to protect from metabolic disorders such as hyperlipidemia or aortic atherosclerosis (Auger et al., 2002). However, the mechanisms of action of antioxidant flavonoids on metabolic effects of such diets remains poorly understood. Due to the complexity of the metabolic response to complex diets and of metabolic effects of polyphenols, we used a metabonomic approach to study the influence of catechin (a common antioxidant polyphenol) on the metabolic disturbances provoked by hyperlipidic diets in rats.
