It is generally accepted that dietary quality is a major predictor of nutritional status and human function in developing countries. In this context, the term “dietary quality” is synonymous with the amount of animal source foods (ASF) in the usualdiet, and inversely related to the percent of dietary energy consumed as plant source foods. Animal source foods are the main or only source of several important micronutrients required for normal health and function (Neumann et al., 2002). The amount of ASF in usual diets predicts the prevalence of inadequate intakes of these nutrients, and is also a predictor of many aspects of human function in developing countries.
