This paper presents an optical fiber spectroscopy method rapidly discriminating formulated apple vinegar from fermented ones. A collection of 80 apple vinegar drinks samples were considered, 25 of which were formulated apple vinegar drinks and the other 55 were fermented ones. Absorption spectra of these apple vinegar drinks samples were measured by near infrared (NIR) spectrometer. These measured spectral data were processed by means of Principal Component Analysis (PCA), which provided a bi-dimensional map. According to the bi-dimensional map, 25 formulated apple vinegar drinks samples were differentiated from 55 fermented apple vinegar ones. The experimental result showed that the optical fiber spectroscopy method was capable of distinguishing formulated apple vinegar drinks from fermented apple vinegar drinks.
