The paper describes the status of potato processing in China by way of detailedintroduction to potato starch, modified starch, frozen French fries, dehydrated mashedpotatoes, potato chips and potato snacks. It analyzes the existing problems in potatoprocessing, mentions the developing potential of potato processing in China and puts forwardthe critical problems that need to be solved.
