The use of NIR spectroscopy for the prediction of the barley variety and the changes during germination and malt production has been demonstrated. Using second derivative mathematical treatments of log 1/R data of barley and malt saples obtained by Spectralyser 1025 spectrophotometer in NIR area, with the help of polar qualification system(PQS) 12 spring and 11 winter varieties have been distringuished. Results indicates that NIR technique may be very useful in the brewery forj the rapid and accurate identification.
