摘要

A new rutinoside was synthesized by rutin-degrading enzymes(RDEs) from a water solution of rutin in the presence of hydroquinone. The novel rutinoside was identified as hydroquinone β-rutinoside by HPLC and 13C-NMR analysis.Hydroquinone β-rutinoside showed inhibitory effect on the activity of tyrosinase derived from mushroom, and exhibited whitening effect with low toxicity in the experiment using cultured B16 melanoma cells.From these results, hydroquinone β-rutinoside is considered to be an effective whitening agent.
