The present invention relates to a method of overexpressing inulinase from Saccharomyces cerevisiae derived from Kluyveromyces marxianus. The present invention relates to a method for continuously producing fructose syrup from a crude inulin of a porcine potato (Jerusalem artichoke) including a step of secretion production, immobilization on a carrier, and a step of constructing a packed immobilized enzyme reactor and reacting with raw inulin. In the present invention, domestic wild pig potatoes were pretreated to form crude inulin, and then applied to a reactor to obtain a 100% hydrolysis rate equivalent to that of pure inulin. According to the continuous production method of fructose syrup of the present invention, crude inulin derived from porcine potato is used as a raw material and reacted with inulinase immobilized on a carrier to continuously produce fructose syrup from inulin in a stable and high yield .
