The invention is characterized in that from the solution Na.sub.2.n.CO.sub.3.na NaHCO.sub.3.n.pripraví buffer having a pH from 9.5 to 10.0, which is heated to temperature of at least 58 degC, to the solution are mixed crushed parts fungi fruiting bodies of oyster mushroom (Pleurotus oestratus) and / or a substrate for growing oyster mingled with mycelium of fungi, wherein fraction admixed part lies in the range 5 mm to 10 mm where mixture of buffer and admixed often has a solids content in the range of 5 to 8%, and extracted with stirring, whereupon the separated filtrate, heated, then neutralized and cooled, odstrení the precipitated protein to a liquid after centrifuging was added the same volume of 2-propanol cooled to temperature of 2-4 degC, mixed centrifuged and the precipitated crude .beta.-glucan. The centrifuged .beta.-glucan is preferably dissolved in distilled water and ultrasonic disintegrator at a temperature of 90 to 100 degC for dispersed colloidal solution.
