摘要

The present invention consists in a process for producing a liquid nutritional supplement based on residual yeast, which is used in liquid culture media intended to increase the growth of Lactococcus lactis subspecies lactis in carbohydrate fermentation processes generating lactic acid as a main metabolic product. Said liquid nutritional supplement is generated from Saccharomyces pastorianus yeast obtained after the manufacture of Pale lager or Pilsen type beer. The production process of the liquid nutritional supplement includes the steps: a) yeast conditioning, b) selective lysis of yeast and c) recovery of the liquid nutritional supplement.
