Histamine Detection Method Using Cascade Enzymes Reaction by Biogenic Amine Hydroxylase and Histamine Oxidase

The present invention, as a method for analyzing the concentration of histamine contained in a sample for food inspections such as meat, fresh fish or measurement of biological samples by using a continuous enzyme reaction of two enzymes specifically and with high sensitivity, discloses a method for detecting histamine which is used for detecting and sensing histamine. The present invention provides the method for detecting histamine which comprises the following steps: (a) attaching a hydroxyl group (-OH) to a biogenic amine other than histamine by adding biogenic amine hydroxylase to the sample; (b) adding histamine oxidase to the sample after the step (a); and (c) adding a dye to the sample to detect the peroxide generated by the histamine oxidase.
