This utility model disclosed the process of developing native chicken (Gallus gallus Linn.) longganisa using vegetable oil as fat substitute wherein at least the process of developing said longganisa comprising the steps of: dressing of the native chicken, deboning of the dressed native chicken, grinding of the deboned native chicken meat, mixing of the deboned native chicken with other ingredients such as salt, soy sauce, brown sugar, anisado wine/Mallorca, garlic, black/white pepper, praque powder, paprika, vinegar/ calamansi juice, pineapple juice, accord powder/cornstarch, and vegetable oil, packing and curing of the said mixture.
