The present invention relates to a beef jerky product, which is prepared with beef from the black cattles grown in Jeju Island, and a preparing method thereof. According to the present invention, the method for preparing the Jeju black cattle beef jerky product includes: an ingredient preparing and measuring step (S100) of preparing ingredients and measuring the ingredients at a predetermined ratio; a black cattle beef cooling and cutting step (S200) of cooling the black cattle beef and cutting the black cattle beef in a predetermined size; a blood removing step (S300) of removing blood included in the cut black cattle beef; a Schisandra chinensis broth preparing step (S400) of preparing the Schisandra chinensis broth for removing the odor of the black cattle beef; a black cattle beef removing step (S500) of soaking the black cattle beef in the Schisandra chinensis broth; a seasoning sauce preparing step (S600) of preparing the seasoning sauce for salinating the black cattle beef; a first salinating and drying step (S700) soaking the black cattle beef in the seasoning sauce and drying the black cattle beef in order to salinate the black cattle beef; a secondary salinating and drying step (S800) of soaking the black cattle beef, which is dried for the first time, in the seasoning sauce again and drying the black cattle beef for the second time in order to salinate the black cattle beef; and a beef jerky preparing step (S900) of preparing the beef jerky by using the black cattle beef salinated and dried for the second time. The beef jerky product is prepared by processing the beef of Jeju black cattles, a natural monument, in a seasoning sauce. The meat texture of the Jeju black cattle beef can be soft and chewy. The Jeju black cattle beef has rich flavors while having a sufficient amount of the seasoning sauce contained therein. The beef jerky product can be enjoyed by any consumer regardless of the age and gender as a high-end snack while being used as a side dish for alcohol consumption, thereby enhancing the added value of jerky products.
