There would be few winemakers who didn't have a story to tell about a ferment that got away. Like winemaker Conor Brasier's story about the tank of Pinot Gris juice at Tamburlaine's Hunter Valley winery that topped 38°C after a cellarhand forgot to turn on the tank's cooling system and then a solenoid valve blew. When the cellarhand came to rack the wine after cold settling, the wine had dropped six Baume while on full solids and finings.Fortunately, this story had a happy ending.
