With increased variability of ripening, as well as increases in the costs of labour, more and more winemakers are looking towards sorting technology. Leading the market are the Selectiv' Process "Winery" berry separator and "Vision 2" optical sorter from Pellenc.The Pera-Pellenc Selectiv' Process "Winery" is a high frequency lineardestemmer, with a rolling sorter table. The combination of technology into one system allows for gentle destemming, while maintaining whole berry integrity, and minimal free run juice, while the roller table removes leaf matter, petioles and shot berries, allowing for 98.8% clean fruit. This is the same technology used on our Optimum grape harvesters.
