有机微量元素对北京油鸡肉、蛋中微量元素含量及品质的影响

         

摘要

[目的]通过设置不同水平有机微量元素的添加试验,研究不同水平有机微量元素(Cu、Fe、Mn、Zn)对北京油鸡蛋,肉中各微量元素含量及品质的影响,本研究可为'北京油鸡'的养殖提供理论基础.[方法]试验选取 420只 18 周龄笼养母鸡随机分为 7 个组,每组 6 个重复,每个重复 10 只.1 组为 100%无机微量元素对照组,2 组为空白对照组(0%),3-7 组分别在饲粮中按 NRC推荐需要量的 25%、50%、75%、100%、125%添加有机微量元素,试验期为 60 日.[结果]有机微量元素仅对肉品质的滴水损失产生显著影响(P0.05).不同水平有机微量元素的对'北京油鸡'鸡蛋的蛋白高度、哈氏单位、蛋黄色泽和蛋黄质量产生了显著影响(P0.05).有机螯合微量元素的添加水平对去壳蛋中Cu、Mn含量影响显著(P0.05).与 100%无机组相比,100%、125%有机组显著提高了蛋中Cu含量,125%有机组蛋中Cu含量达到最高;75%有机组蛋中 Mn含量显著高于其他添加组,其他添加组无显著差异,未添加空白组蛋中Cu、Mn含量显著低于各添加组.[结论]有机微量元素的添加能改善蛋、肉品质及蛋中微量元素含量,综合来看添加 25%推荐量效果最佳.%[Objective]To study the effects of organic trace elements (Mn,Fe,Cu,Zn )at different lev-els on trace element content in the eggs and chicken of Beijing You chicken.[Method]Four hundred and twenty 18-week-old Beijing You chicken were randomly allocated to 7 groups,with 6 replicates of 10 birds each .Group 1 was fed 100% inorganic trace elements.Group 2 was not supplemented trace elements (the control,0%),Groups 3 to 7 were supplemented with organic trace elements at 25% ,50% ,75% ,100% , and 125% of NRC (1994 )recommended respectively .The experiment lasted 60 days.[Result]The re-sults showed that organic trace elements added a significant effect on the drip loss of breast muscle and leg muscle (P<0.05).The drip loss of the control group was significantly higher than other groups.Inorganic group and other groups had no significant difference.Organic groups added had a significant effect on egg protein level,Hartz unit,egg yolk and egg yolk color (P<0.05).The organic group at 25% had the highest Hartz unit and the albumen height,significantly higher than inorganic group of 100% and the control group (0%).The organic group at 75% had the highest yolk color and yolk weight,yolk weight significantly higher than inorganic group of 100% and the control group (0%).The adding of Mn,Fe,Cu and Zn at dif-ferent level had no significant effect on the content of Mn,Fe,Cu and Zn in breast muscle and leg muscle. The content of Cu and Mn in eggs were significantly influenced by trace elements of different level (P<0.05 ).Compared with inorganic group of 100%,organic groups at 100% and 125% significantly increased Cu content in the egg,organic groups at 125% reached the highest.Mn content in the eggs of organic group at 75% was significantly higher than other groups.The content of Cu and Mn of the control group were significantly lower than other groups.[Conclusion]Adding organic trace elements improve the egg quality, meat quality,trace element content in the eggs.The adding at 25% has the best effect.
