乳蛋白质糖基化的研究进展

         

摘要

Milk is not only rich in various nutrients, but also contains bioactive substances which have been documented to exert protective effects in the human body. Milk glycoproteins play a role in protecting against pathogen infection, modulating the intestinal flora and regulating the immune system. This paper summarizes the types of protein glycosylation and the methods used to study protein glycosylation and reviews milk glycoprotein composition, glycosylation sites, glycan structure and bioactive functions of milk glycoproteins, aiming at providing useful information for further study and utilization of these important bioactive glycoproteins.%乳中不但含有营养成分,还含有多种生物活性物质.糖蛋白作为乳中具有生物活性的多糖复合物,能够起到防止病原菌感染、调节肠道微生物菌群和免疫防御等作用.本文综述了蛋白质糖基化的类型、研究方法、乳中主要糖蛋白的组成、糖基化位点、糖链结构及乳糖蛋白的生物学功能的研究进展,旨在为进一步研究乳蛋白质糖基化提供参考,为利用乳中具有重要生物学功能的糖蛋白提供一定的理论依据.
