扇贝加工的研究进展

摘要

Scallop aquaculture is one of the important species in China with high nutritional and food value. This paper summarizes the status of scallop processing product research , summed up the research progress of the processing of dried scallops, instant scallop and the comprehensive utilization of scallop mantle, and look forward to the developing prospect of scallop processing.%　　扇贝是我国海水养殖的重要品种之一，具有很高的营养和食用价值。本文概述了扇贝加工产品的研究现状，总结了干贝、即食扇贝、扇贝裙边的综合利用等方面的研究进展，展望了扇贝相关产品的发展方向。
