酶法提取米糠油的工艺研究

         

摘要

研究了米糠油的酶解工艺。考察了酶的添加量、酶解温度、酶解时间对油脂提取率的影响。确定酶法提取的适宜条件为:蛋白酶添加量1.0%,55℃下提取5 h。用此法提取的米糠油除酸值略高外,其余理化指标完全达到国标三级米糠油的标准。%The extraction technology of rice bran oil by enzyme was studied in this paper , The effects of addition enzyme, enzymolysis time and enzymolysis temperature on the oil extraction rate was investigated. Optimum conditions of rice bran oil were enzyme amount was 1.0%and digested at 55℃for 5 h. But the acid value of oils had high, the physicochemical indexes reach three GB of rice bran oil standard.
