五种经济贝类的营养成分及蛋白质质量分析

         

摘要

In this paper, the contents of nutrient ingredients and protein quality in five species of economic shellfish were studied. It was found that the five species were high in high quality protein content and low in fat content. In addition, they also had rich inorganic elements, and had a great prospect of the industrial process.%研究栉孔扇贝、文蛤、太平洋牡蛎、紫贻贝和毛蚶5种经济贝类的营养成分,并进行蛋白质营养价值评价。结果表明,这5种贝类蛋白质含量高营养价值好,脂肪含量低,矿物质含量丰富,具有较好的开发和利用价值。
