采用X-射线衍射分析方法,对微波提取的水溶性大豆多糖与热水浸提的水溶性大豆多糖进行结构分析研究,结果表明热水浸提方法和微波提取方法得到的水溶性大豆多糖具有相似的结构,105℃以下的加热对水溶性大豆多糖的结构没有影响。%The structure of the soluble soybean polysaccharides (SSPS) from soybean dregs had been studied by analyzing X-ray diffraction (XRD) patterns. According to the analysis of XRD patterns, SSPS had the similar structure no matter what were extracted by hot water or microwave. And there was no change on the structure , when the heating temperature of SSPS (no matter what were extracted by hot water or microwave) was below 105℃.
