黑曲霉菌降解黄曲霉毒素B1的影响因素的研究

         

摘要

Aflatoxin B1 (AFB1), as a kind of mycotoxin produced by Aspergillus spp., was a highly toxic substance and widely distributed in food matrix. Microbiological was major research method of the degradation of AFB1. The study use screened Aspergillus niger which can degrade AFB1, through different treatment of fermentation broth, thermal stability, pH stability, and the stability of the metal ions of the fermentation broth, to research the effect factors of AFB1 degradation.Through its fermentation broth different handling methods and different conditions of its degradation of AFB1 ability of research, initially determine the screening strains by metabolism and secretion of extracellular enzymes to degrade AFB 1, while the secretion of extracellular enzymes is main means of AFB1 degradation.%谷物类原料因保管不善造成或加工过程中操作不当易产生大量黄曲霉毒素B1。目前,微生物法已成为降解黄曲霉毒素B1的研究热点。本研究用已筛选出具有降解黄曲霉毒素B1能力的黑曲霉菌为研究对象,从发酵液不同处理方式,热稳定性,pH稳定性,金属离子稳定性等方面,对其降解的影响因素进行了研究。通过对其发酵液不同处理途径和不同条件对其降解黄曲霉毒素B1能力的影响的研究,初步判断筛选菌株是通过直接代谢和分泌胞外酶两种途径共同降解黄曲霉毒素B1的,而分泌胞外酶又是其主要的降解黄曲霉毒素B1的手段,因此易受温度、pH、和金属离子的影响。
