3种烟熏液的成分分析及其对肠衣性能的影响

         

摘要

With a headspace solid phase microextraction(HS-SPME) and GC-MS, the components of apple wood of liquid smoke (AWLS), walnut wood of liquid smoke (WWLS) and hawthorn seed of liquid smoke (HSLS) were investigated, as well as their effects on the mechanical properties and color of natural casing and collagen casing, the volatile components of HSLS, AWLS, WWLS were composed of phenols(68.33%-82.53%), carbonyl compounds(10.15%-17.18%)[including aldehyde(1.35%-12.07%)], etc. The addition of all liq-uid smokes at 5%led to a significant increase in tensile strength (P<0.05), but a decrease in elongation at break under room temperature. Compared with the control group, the smoke liquid treated casings showed a sig-nificant deeper color:L*value of the casings decreased, and the a*and b*values increased. The effects of liquid smoke on the mechanical properties and color of casings may closely related with composition in the liquid smokes, and liquid smoke composition of different directly influence the reliability of casing,wherein HSLS showed the best performance.%采用顶空固相微萃取(HS-SPME)联合气质联用(GC-MS)测定了苹果木烟熏液(AWLS)、核桃木烟熏液(WWLS)和山楂核烟熏液(HSLS)的挥发性成分,并研究了其对天然肠衣和胶原蛋白肠衣的机械性能和色度的影响。研究表明,HSLS、AWLS、WWLS中挥发性成分中主要包括酚类(68.33%~82.53%)、羰基化合物(10.15%~17.18%)[其中醛类占(1.35%~12.07%)]等。常温下,利用3种烟熏液以5%浓度处理两种肠衣对其拉伸强度有显著提高(P<0.05),断裂延伸率有所降低。同时,与对照组相比,烟熏液处理过的两种肠衣色泽均明显加深:两种肠衣的L*值与对照组相比成下降趋势;且用HSLS浸泡的两种肠衣的a*值b*值都变大了。烟熏液对肠衣的机械性能的提高及对色度的影响可能与其含有酚、醛及其它羰基化合物有关,并且烟熏液组成的不同直接影响肠衣性能,HSLS对肠衣的机械性能提高最大。
