动物源性食品中性激素检测方法的比较分析

         

摘要

Gonadal hormone residue in animal derived food is harmful to people,so the detection methods with low detection limit and high sensitivity are of great significance for the food safety.Possible hazard of gonadal hormone residue and the standards of detection methods for gonadal hormones in animal derived food in China were presented. The prospects and limitations of the extraction, purification and determination of gonadal hormone in animal derived food were discussed and analyzed.The research progress and application prospects of chromatography-mass spectrometry methods for the detection of gonadal hormone in animal derived food were discussed emphatically, which has important enlightenment and reference significance for the inspector and researcher.%动物源性食品中激素的残留会影响人体内的正常激素功能,因此需要开发具有低检出限、高灵敏度的检测方法,以保证食品安全.分析动物源性食品中性激素残留对人体造成的可能危害,综述我国现行的动物源性食品中性激素的检测标准并对近年来国内外动物源性食品中性激素的提取、净化及检测方法的前景和局限性进行展望和分析.重点讨论高灵敏度的色谱-质谱法在动物源性食品性激素残留检测中的研究进展及应用前景,希望为检测人员及相关研究者提供参考和借鉴.
