This study evaluated the interaction of Chysanthremum indicum flavonoids(luteolin,acacetin and buddleoside)with starch by surface plasmon resonance(SPR).Their equilibrium dissociation constant(KD) were(4.822 4 ± 0.06),(3.441 3 ± 0.06)and(2.367 6 ± 0.25)mmol/L,respectively.On this basis,it was found that three flavonoids had inhibitory effect on the digestion of starch.when the concentration was 100 μmol/L, the inhibition rate was 10.92 %, 16.02 % and 26.71 %, respectively. Moreover, the antioxidant activity of Chysanthremum indicum flavonoids was inhibited after the interaction with starch.The results showed that the number and position of hydroxyl groups played an important role in the interaction between the three flavonoids and starch.In addition,SPR can be used as a rapid method to study the interaction of flavonoids and starch, and provide useful information for the application of Chrysanthemum indicum flavonoids in food and pharmaceutical area.%利用表面等离子体共振技术(surface plasmon resonance,SPR)评估野菊花黄酮(蒙花苷、刺槐素、木犀草素)与淀粉的相互作用,得到平衡解离常数KD值分别为(4.8224 ± 0.06)、(3.4413 ± 0.06)、(2.3676 ± 0.25)mmol/L.在此基础上,研究发现3种黄酮对淀粉的消化具有抑制作用,当浓度为100 μmol/L时,抑制率分别为10.92 %、16.02 %、26.71 %.并且野菊花黄酮与淀粉相互作用之后,其抗氧化活性受到抑制.进一步分析表明,羟基的数目及位置对3种黄酮与淀粉的相互作用十分重要.此外,SPR可作为快速研究黄酮与淀粉作用的一种手段,为野菊花黄酮在食品和医药领域的应用提供有用信息.
