北部湾海蜇中硼酸本底值测定及食用风险评估

         

摘要

In order to evaluate the boric acid content of finished jellyfish of Beibu Gulf scientifically and accu-rately,the background value of boric acid in 180 natural jellyfish was determined.At the same time,the rela-tionship between boric acid and soaking time in jellyfish products was studied,and the risk analysis of jellyfish products was carried out with the daily allowable intake of boron.Results indicated that the content of boric acid of jellyfish of Beibu Gulf were ranged from 3.22 mg/kg to 17.73 mg/kg,the content of boric acid of finished jelly-fish of Beibu Gulf were ranged from 5.0 mg/kg to 30.0 mg/kg.The boric acid content of the finished jellyfish is mostly concentrated below 30 mg/kg,which is well below the limit of 72 mg/kg,without considering the addition of artificial.Recommended in the daily consumption of jellyfish,in order to minimize the intake of boric acid in jellyfish,should be soaked and replaced the water for more than 6 h.%为科学准确的评价北部湾产成品海蜇中硼酸含量,对北部湾海域海捕的180份海蜇进行了本底值测定,同时对海蜇产品中硼酸含量与浸泡时间的关系进行研究,结合硼的日允许摄取量对海蜇制品进行风险分析.结果显示海捕海蜇硼酸含量的范围为3.22 mg/kg~17.73 mg/kg,海蜇制品硼酸含量在5.0 mg/kg~30.0 mg/kg之间,在不考虑人为添加的情况下,成品海蜇中硼酸含量大部分集中在30 mg/kg以下,远低于72 mg/kg的限量,建议在日常食用海蜇时,为了最大限度的降低海蜇中硼酸的摄入量,应换水浸泡6h以上.
